NUT 612 - Advanced Quality Systems
This course explains the link between food properties and quality attributes and describes the principles of technological methods and techniques in quality control. It highlights as well the operational quality systems in food establishments with emphasis on the quality assurance and traceability systems. Prerequisite: NUT334 Foodservice Management [3-0, 3 cr.]
